No Bake Energy Bites

No Bake Energy Bites

 1 Cup of Oats (uncooked)
1/2 Cup of Peanut Butter (or almond butter)
1/3 Cup of Agave (or Honey)
1/2 Cup of Ground Flaxseed (or 1/2 cup graham cracker crumbs)
 1 tsp of Vanilla
1/2 Cup of Mini Chocolate Chips


Mix all of the ingredients together
Chill for a half an hour
Roll into balls
(Note: I made 16 balls larger balls, but you can make 24 smaller ones)
Store in an air tight container


I'm not going to lie, these went super fast!

Volcano Cookies!

I found this recipe earlier today!
They look AMAZING!
I mean, who doesn't like chocolate chip cookies that have been stuffed with even MORE chocolate!?!
I will be making these in the near future, but instead of a muffin top pan, I will use my new cookie bar pan!

FUDGY OATMEAL BARS

Can I just say YUM!?!
These bars have an oatmeal cookie base and a fudgy chocolate center.
They are very similar to my
and were a HUGE hit!!!

Fudgy Oatmeal Bars

3 cups quick cooking oats
2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
2 cups packed brown sugar
2 eggs
2 Tbsp vanilla extract, divided
1 (14 ounce) can sweetened condensed milk
2 cups semisweet chocolate chips
3 Tbsp butter
1/2 tsp salt

Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking pan.

In a large bowl, beat together 1 cup butter and brown sugar until fluffy. Mix in eggs and 1 tablespoon vanilla. In another bowl, combine oats, flour, baking soda, and 1 teaspoon salt; stir into butter mixture. Set aside.

In a medium saucepan, heat sweetened condensed milk, chocolate chips, 3 tablespoons butter, and 1/2 teaspoon salt over low heat, stirring until smooth. Remove from heat. Stir in 1 tablespoon vanilla.

Pat 2/3 of the oat mixture into the bottom of the prepared pan. Spread chocolate mixture evenly over the top, and dot with remaining oat mixture.

Bake for 30 to 35 minutes in preheated oven.
Let cool completely, then cut into bars.
